This sugar-free oatmeal tastes like a thick pudding laced with cinnamon.  Why eat it for breakfast only?  It would be good as a dessert or snack any time of the day.

Sugar-Free Sweet Pudding Oatmeal

If you are eating a plant based diet, this would be a great addition to your menu.  It tastes like a decadent dessert.

Ingredients
  

  • 1-1/2 cups Old Fashioned Oats
  • 1 cup Ground Flaxseed
  • 2-1/2 cups Water or more to your desired thickness
  • 1/2 cup Raisins
  • 2 tbsp Cinnamon
  • 1/2-1 cup Monkfruit or Purecane Sugar
  • 2 Eggs

Instructions
 

  • Mix all ingredients thoroughly in a large saucepan and cook over medium heat, stirring often.
  • When oats begin to bubble, turn down to lower heat and continue to stir. Do not let them stick. If it is too thick for your taste, add more water and keep stirring until you have the consistency you like.
  • I usually cook it about 10-15 minutes, and then store in a container in the refrigerator. I reheat individual servings and add water as needed for thickness to your taste.
