Ingredients
  

  • 2 cups Brown Monkfruit Sugar (Lakanto® Brand)
  • 2 cups Hot Water
  • 4 tsp Coconut Oil (MCT)
  • 1/2-3/4 cup Raisins
  • 1 tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Cloves
  • 3 cups Flour
  • 1 tsp Baking Soda dissolve in a couple of teaspoons of hot water

Instructions
 

  • Mix brown sugar, hot water and coconut oil in medium size saucepan.
  • Add raisins, salt, cinnamon, cloves and bring to a boil. Continue to boil 5 minutes.
  • Remove from stove and let cool.
  • After cooling, be sure it cools completely; this is very important. Add flour and dissolved baking soda. Mix thoroughly.
  • Pour into a greased tube pan and bake 50-60 minutes at 350 degrees. Test with toothpick. Do not overbake.
