Sugar Free Spice Cake

Easy to make Sugar Free Spice Cake with raisins. This cake is beautiful to take to any event. The best thing is you will not be breaking your diet or harming your health, because it uses Monkfruit Brown Sugar which is Keto approved and safe for diabetics.

Sugar Free Spice Cake
If you find out you are out of eggs and want to make a dessert, no problem. This delicious sugar-free cake uses no eggs!
Ingredients
- 2 cups Brown Monkfruit Sugar (Lakanto® Brand)
- 2 cups Hot Water
- 4 tsp Coconut Oil (MCT)
- 1/2-3/4 cup Raisins
- 1 tsp Salt
- 1 tsp Cinnamon
- 1 tsp Cloves
- 3 cups Flour
- 1 tsp Baking Soda dissolve in a couple of teaspoons of hot water
Instructions
- Mix brown sugar, hot water and coconut oil in medium size saucepan.
- Add raisins, salt, cinnamon, cloves and bring to a boil. Continue to boil 5 minutes.
- Remove from stove and let cool.
- After cooling, be sure it cools completely; this is very important. Add flour and dissolved baking soda. Mix thoroughly.
- Pour into a greased tube pan and bake 50-60 minutes at 350 degrees. Test with toothpick. Do not overbake.
