Sugar Free Poppy Seed Loaf Cake
If you are in a hurry, this is the dessert for you.
Ingredients
- 3 cups flour I use oat flour
- 2-1/2 cups Monkfruit or Purecane Sugar
- 1-1/8 cups oil
- 1-1/2 cups milk any kind
- 3 eggs
- 1-1/2 tsp baking powder
- 1-1/2 tsp salt
- 1-1/2 tbsp poppy seeds
- 1-1/2 tsp vanilla
- 2 tsp almond extract
Instructions
Glaze
- Mix together with spoon 1/4 - 1/2 cup powdered Monkfruit or Purecane sugar, 1-2 tbsp milk or water, plus 1 tsp vanilla and almond extract.
- Pour over warm cake to glaze.
Loaf
- Mix all ingredients together. Then use mixer for 2 minutes.
- Pour into two (large or medium) loaf pans. Be sure to grease pans.
- Bake for 35-45 minutes at 350 degrees. Test frequently with toothpick--don't overcook.
- Take out of pan immediately and glaze.
