Sugar Free Moist Lemon Cake

This sugar-free cake is moist and tingles on your tongue from the soft sweetness of real lemon juice.

Sugar Free Moist Lemon Cake
If you want a dessert that is fast to make and will please even the most discerning guests, this is the one you must try.
Ingredients
Cake
- 1 stick Butter softened
- 1-1/2 cups White Monkfruit Sugar (Lakanto® Brand)
- 2 cups Oat Flour no need to sift
- 2 Eggs
- 1 cup Milk any kind
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 3 tbsp Lemon Juice
Glaze
- 3 tbsp Lemon Juice
- 1/4-1/2 cup Powdered Monkfruit Sugar (Lakanto® Brand)
Instructions
- Add all the ingredients to a mixing bowl and mix for 2 minutes until smooth.
- Grease an 8x10 pan. Pour the cake mix into the pan.
- Bake at 325 degrees for 35-42 minutes. Do not overbake. Keep testing in the center with a toothpick to see when it comes out clean and stop baking.
- When the cake is done, drizzle it while hot with the glaze. Cut after the cake completely cool
