  • 1 stick Butter softened
  • 1-1/2 cups White Monkfruit Sugar (Lakanto® Brand)
  • 2 cups Oat Flour no need to sift
  • 2 Eggs
  • 1 cup Milk any kind
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 3 tbsp Lemon Juice



  • Add all the ingredients to a mixing bowl and mix for 2 minutes until smooth.
  • Grease an 8x10 pan. Pour the cake mix into the pan.
  • Bake at 325 degrees for 35-42 minutes. Do not overbake. Keep testing in the center with a toothpick to see when it comes out clean and stop baking.
  • When the cake is done, drizzle it while hot with the glaze. Cut after the cake completely cool
