Sugar Free Lemon Pie

What’s a better way to start the summer than a refreshing and zesty lemon pie?! This sugar free take on a traditional lemon pie will give you that sweet and tart taste you enjoy.

Sugar Free Lemon Pie
This lemon pie is creamy and sweet with just a little tart undertone. Simple to make and delicious to eat.
Ingredients
- 1 - 8 or 9-inch prepared graham cracker crust
- 3 eggs
- 1 - 13-14oz can full fat coconut milk
- 1/2 cup lemon juice concentrate
- 1/2-3/4 cup Monkfruit Classic White (Lakanto Brand) to your sweetness
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, beat eggs with coconut milk, and lemon juice (use a whisk).
- Add Monkfruit slowly and whisk until completely dissolved.
- Pour mixture into graham cracker crust and bake 35-45 minutes or until middle is set.
- Let cool and then refrigerate.
Notes
The pie recipe shown uses a prepared pie crusts which contains a small amount of sugar per each piece of pie. The filling for for the pie is sugar free.
