It’s hot and nothing could be more refreshing than Sugar-Free Chocolate Cinnamon Pudding. It easy to make and yummy to your taste buds.

Sugar Free Chocolate Cinnamon Pudding
Delicious sugar-free chocolate pudding with a new twist. Triple the recipe, and pour into a prepared graham cracker crust for a memorable pie.
Ingredients
- 2-3/4 cup Coconut Milk
- 1/2 teaspoon Cinnamon
- 1/2 cup White Monkfruit Sugar (Lakanto® Brand)
- 1/3 cup Cocoa Powder Unsweetened
- 3 tablespoon Cornstarch
- 1/8 teaspoon Salt
Instructions
- In a saucepan, heat 2 cups coconut milk and the cinnamon until it is hot and ready.
- In a bowl mix together Monkfruit sugar, cocoa, cornstarch and salt. Blend into this mixture the remaining ¾ cup coconut milk and stir together until smooth.
- Stir this mixture into the saucepan of hot coconut milk. Stir constantly over medium heat until boiling.
- Change to low temperature and cook 1-2 minutes stirring constantly.
- Pour into serving dishes and chill.
