Sugar-Free Cheesy Bacon Muffins

Cheesy muffins with crumbled bacon are good with any meal but great for a fast healthy breakfast.

Sugar-Free Cheesy Bacon Muffins

I like to bake turkey bacon in the oven until very crisp. I crumble it for these muffins, and they are delicious.

Ingredients
  

  • 2 cups Flour I prefer oat flour
  • 1/2-1 cup Shredded Cheddar Cheese or flavor of your choice
  • 8 strips Bacon cooked & crumbled -- I prefer turkey bacon
  • 2 tbsp White Monkfruit Sugar (Lakanto® Brand) or Purecane brand
  • 1/2 tsp Garlic Powder
  • 3 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 Egg
  • 1 cup Milk I prefer canned coconut milk, it's sugar-free
  • 1/4 cup MCT Oil a.k.a. coconut oil

Instructions
 

  • Preheat over to 350 degrees.
  • In a large bowl combine all ingredients and stir the mixture until blended. Do not over stir.
  • Fill muffin liners until two-thirds full.
  • Bake for 15-20 minutes or until toothpick inserted in the center comes out clean. Do not overbake.
