Sugar Free Cashew Fudge Brownies

Who doesn’t love chocolate? The ultimate brownie is our recipe of the month: Sugar-Free Cashew Fudge Brownies. If you are having a large group, this is the dessert to make. Cut them into small squares and listen to the sighs of delight. No one will be able to tell they are sugar-free.

Sugar Free Cashew Fudge Brownies
You will never buy a box brownie mix again when you can make these so quickly and have no guilt, because they are sugar-free.
Ingredients
- 2 sticks real butter
- 2 cups White Monkfruit Sugar (Lakanto® Brand)
- 4 eggs
- 1 cup cocoa powder
- 1-1/4 cups flour (I love oat flour)
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup halved cashews
Instructions
- Preheat oven to 350 degrees
- Melt butter and pour into large bowl
- Add sugar and cocoa, mixing with large spoon
- Add eggs, and vanilla, continuing to stir
- In separate bowl, sift flour, salt, and baking powder, then add dry ingredients to bowl and stir in cashews. Mix well.
- Pour mixture into 9x13 baking pan. Bake for 20-30 minutes until toothpick tested in the center comes out clean. Do not over-bake.
