Sugar Free Cashew Fudge Brownies

Sugar Free Cashew Fudge Brownies

You will never buy a box brownie mix again when you can make these so quickly and have no guilt, because they are sugar-free.

  • 2 sticks real butter
  • 2 cups White Monkfruit Sugar (Lakanto® Brand)
  • 4 eggs
  • 1 cup cocoa powder
  • 1-1/4 cups flour (I love oat flour)
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup halved cashews


  • Preheat oven to 350 degrees
  • Melt butter and pour into large bowl
  • Add sugar and cocoa, mixing with large spoon
  • Add eggs, and vanilla, continuing to stir
  • In separate bowl, sift flour, salt, and baking powder, then add dry ingredients to bowl and stir in cashews. Mix well.
  • Pour mixture into 9x13 baking pan. Bake for 20-30 minutes until toothpick tested in the center comes out clean. Do not over-bake.
