No Sugar Added Pumpkin Pie

Thanksgiving is coming up and what could be better than a pumpkin pie with no added sugar. Make sure to find a low or no sugar prepared crust. None of your guests will know your secret that this is a healthy pumpkin pie but so delicious they will beg for seconds—better make two.

No Sugar Added Pumpkin Pie
Don’t go out and buy a prepared pie when you can have homemade. This pie is so easy to make with a store-bought crust.
Ingredients
- 1 15oz Can of Pumpkin
- 3/4 cup White Monkfruit Sugar (Lakanto® Brand)
- 1 tsp Cinnamon
- 1/2 tsp Salt
- 1/2 tsp Ginger
- 1/2 tsp Nutmeg
- 2 Eggs
- 1 13oz Can of Coconut Milk
Instructions
- Mix Monkfruit Sugar, cinnamon, salt, ginger, and nutmeg in small bowl.
- Beat eggs in a large bowl.
- Stir in pumpkin and sugar spice mixture.
- Gradually stir in coconut milk until well blended.
- Pour into store-bought pie crust. Bake for 15 minutes at 425 degrees and turn the oven back to 350 degrees and bake for 50 minutes more or until a toothpick comes out of the center clean.
