No Added Sugar Sour Cream Coffee Cake

When friends drop in for a visit, wouldn’t it be fun to serve them something healthy and sugar free? They will never know the difference.

No Added Sugar Sour Cream Coffee Cake
This is a fast cake to make, because the icing is brown sugar and cinnamon and just sprinkled on before you bake the cake.
Ingredients
Coffee Cake
- 1/4 lb Butter softened
- 1 cup White Monkfruit Sugar (Lakanto® Brand)
- 2 Eggs
- 2 cups Oat Flour or flour of your choice
- 1/4 tsp Salt
- 1 tsp baking powder
- 1 tsp Baking Soda
- 1 cup Full Fat Sour Cream
- 1 tsp Vanilla Extract
Topping
- 1/4 cup Brown Monkfruit Sugar (Lakanto® Brand)
- 1-2 tsp Cinnamon
Instructions
- Cream butter, sugar and eggs.
- Add flour, salt baking powder, and soda together stir with spoon. Then add sour cream and vanilla. Mixing together thoroughly with a large spoon.
- Pour into an 8" square cake pan.
- Mix topping ingredients together and sprinkle over the batter.
- Bake for 35-40 minutes at 350 degrees; do not over-bake. Use toothpick to test if it comes out of the center clean.
