Sugar Free Poppy Seed Loaf Cake

- 3 cups flour I use oat flour
- 2-1/2 cups Monkfruit or Purecane Sugar
- 1-1/8 cups oil
- 1-1/2 cups milk any kind
- 3 eggs
- 1-1/2 tsp baking powder
- 1-1/2 tsp salt
- 1-1/2 tbsp poppy seeds
- 1-1/2 tsp vanilla
- 2 tsp almond extract
Glaze
Mix together with spoon 1/4 - 1/2 cup powdered Monkfruit or Purecane sugar, 1-2 tbsp milk or water, plus 1 tsp vanilla and almond extract.
Pour over warm cake to glaze.
Loaf
Mix all ingredients together. Then use mixer for 2 minutes.
Pour into two (large or medium) loaf pans. Be sure to grease pans.
Bake for 35-45 minutes at 350 degrees. Test frequently with toothpick--don't overcook.
Take out of pan immediately and glaze.
