Sugar Free Poppy Seed Loaf Cake

Ingredients
  

  • 3 cups flour I use oat flour
  • 2-1/2 cups Monkfruit or Purecane Sugar
  • 1-1/8 cups oil
  • 1-1/2 cups milk any kind
  • 3 eggs
  • 1-1/2 tsp baking powder
  • 1-1/2 tsp salt
  • 1-1/2 tbsp poppy seeds
  • 1-1/2 tsp vanilla
  • 2 tsp almond extract

Instructions
 

Glaze

  • Mix together with spoon 1/4 - 1/2 cup powdered Monkfruit or Purecane sugar, 1-2 tbsp milk or water, plus 1 tsp vanilla and almond extract.
  • Pour over warm cake to glaze.

Loaf

  • Mix all ingredients together. Then use mixer for 2 minutes.
  • Pour into two (large or medium) loaf pans. Be sure to grease pans.
  • Bake for 35-45 minutes at 350 degrees. Test frequently with toothpick--don't overcook.
  • Take out of pan immediately and glaze.
