- 2 sticks real butter
- 2 cups White Monkfruit Sugar (Lakanto® Brand)
- 4 eggs
- 1 cup cocoa powder
- 1-1/4 cups flour (I love oat flour)
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup halved cashews
Preheat oven to 350 degrees
Melt butter and pour into large bowl
Add sugar and cocoa, mixing with large spoon
Add eggs, and vanilla, continuing to stir
In separate bowl, sift flour, salt, and baking powder, then add dry ingredients to bowl and stir in cashews. Mix well.
Pour mixture into 9x13 baking pan. Bake for 20-30 minutes until toothpick tested in the center comes out clean. Do not over-bake.
