Sugar Free Spice Cake

- 2 cups Brown Monkfruit Sugar (Lakanto® Brand)
- 2 cups Hot Water
- 4 tsp Coconut Oil (MCT)
- 1/2-3/4 cup Raisins
- 1 tsp Salt
- 1 tsp Cinnamon
- 1 tsp Cloves
- 3 cups Flour
- 1 tsp Baking Soda dissolve in a couple of teaspoons of hot water
Mix brown sugar, hot water and coconut oil in medium size saucepan.
Add raisins, salt, cinnamon, cloves and bring to a boil. Continue to boil 5 minutes.
Remove from stove and let cool.
After cooling, be sure it cools completely; this is very important. Add flour and dissolved baking soda. Mix thoroughly.
Pour into a greased tube pan and bake 50-60 minutes at 350 degrees. Test with toothpick. Do not overbake.
