In a saucepan, heat 2 cups coconut milk and the cinnamon until it is hot and ready.
In a bowl mix together Monkfruit sugar, cocoa, cornstarch and salt. Blend into this mixture the remaining ¾ cup coconut milk and stir together until smooth.
Stir this mixture into the saucepan of hot coconut milk. Stir constantly over medium heat until boiling.
Change to low temperature and cook 1-2 minutes stirring constantly.
