Sugar Free Secret Ingredient Brownies

The ultimate comfort food. Sugar free brownies that can be either chewy or gooey depending on the baking time. What a concept—yum, yum!

Sugar Free Secret Ingredient Brownies
If you want warm brownies that are like a chocolate molten river, cook less. If you want chewy brownies, cook more.
Ingredients
- 1 Stick Butter
- 1/2 cup Coconut Oil (MCT)
- 3/4 cup Brown Monkfruit Sugar (Lakanto® Brand) (plus 2 TBSP) packed
- 3/4 cup White Monkfruit Sugar (Lakanto® Brand) (plus 2 TBSP)
- 1/4 tsp Salt
- 2 tsp Vanilla
- 3 Eggs large
- 2 tbsp Sour Cream
- 3/4 cup Unsweetened Cocoa Powder
- 3/4 cup Flour I prefer oat flour
- 1/4 cup Milk Chocolate Chips
Instructions
- Preheat Oven to 350 Degrees.
- Line an 8x8 inch baking pan with parchment paper.
- Melt the butter in microwave just until soft and add to coconut oil in a bowl.
- Add the sugars and salt to the bowl, stir until the mixture is smooth and cooled a bit.
- Use a mixer to beat in the vanilla, eggs, and sour cream - at least two minutes on medium, until batter is frothy.
- Add the cocoa powder and flour into the bowl. Use a rubber spatula to fold the flour-cocoa mixture into the wet ingredients until just incorporated. DO NOT overmix.
- Gently fold in the chocolate chips. Spread evenly in the prepared pan.
- Bake to preferred doneness: 30 minutes for gooey center; 35 minutes for a fudgy center: 40 minutes for a chewy center.
- Cool completely uncovered on counter or in regrigerator. Cut when cool. You can store in refrigerator.
